Overview
This course examines the scientific principles and practical methods of sensory evaluation and quality control in café and beverage operations. Students investigate taste, aroma, mouthfeel, appearance, temperature, texture, and aftertaste, with attention to the influence of human perception on product acceptance.
Topics include sensory vocabulary, panel selection and training, controlled tasting environments, sample coding, blind and comparative testing, preference testing, descriptive analysis, scoring rubrics, and introductory interpretation of sensory data. Students also examine ingredient freshness, storage, sanitation, allergen awareness, equipment hygiene, water quality, batch consistency, and corrective action procedures.
Practical activities develop students’ ability to distinguish product faults from personal preferences, document observations objectively, relate sensory findings to preparation variables, and recommend evidence-based process improvements.
Learning Outcomes
- Design a basic sensory evaluation test using appropriate sample coding, controls, panel procedures, and scoring criteria.
- Evaluate coffee and milk-based beverages against standardized sensory and quality-control criteria.
- Differentiate common beverage faults from individual preference and relate observed defects to preparation, storage, or ingredient variables.
- Apply sensory vocabulary and descriptive analysis methods to document product characteristics objectively.
- Identify food-safety, sanitation, allergen, storage, equipment, and water-quality risks in café operations.
- Construct a practical café quality-control checklist incorporating monitoring requirements, acceptance criteria, and corrective actions.
- Interpret basic sensory results and formulate evidence-based recommendations for improving product consistency and customer acceptance.
