Overview
This course examines the design, analysis, and management of high-throughput service operations in food service, hospitality, retail, and related environments. Students study service blueprints, process mapping, demand forecasting, capacity planning, queue management, bottleneck analysis, facility layout, labor scheduling, inventory coordination, and quality control.
Menu and service-catalog design are treated as operational systems that connect customer communication, product mix, contribution margins, preparation complexity, ingredient cross-utilization, pricing, bundling, customization, and service speed. The course also addresses digital ordering, production display systems, pickup and delivery workflows, accessibility, waste reduction, service recovery, and ethical responsibilities concerning transparent pricing, safety, equitable access, and worker conditions.
Learning Outcomes
- Evaluate high-throughput service systems using process maps, service blueprints, and performance indicators.
- Diagnose capacity constraints, bottlenecks, queueing problems, and operational risks in service environments.
- Calculate and interpret demand, capacity, utilization, contribution margin, labor, and inventory measures.
- Develop strategically coherent menus or service catalogs that balance customer value, profitability, complexity, and service speed.
- Design staffing, equipment, layout, and workflow plans aligned with demand patterns and operating constraints.
- Synthesize customer experience, financial, safety, accessibility, and sustainability data to recommend service improvements.
- Assess digital ordering, production display, pickup, delivery, and service-recovery processes for operational effectiveness.
- Justify ethical and evidence-based decisions concerning pricing transparency, food and workplace safety, equitable access, waste reduction, and worker welfare.
