Overview
This course examines sanitation management, regulatory compliance, and risk-based control systems in lean, high-volume operations, including food service, hospitality, retail, healthcare support, and facility-based businesses. Students analyze hazard identification, contamination pathways, personal hygiene, cleaning and sanitizing procedures, temperature and time control, allergen management, pest prevention, waste handling, water safety, equipment maintenance, and incident response.
The course distinguishes legal minimums from robust safety systems and applies lean management principles without weakening essential public health or worker protection measures. Students develop sanitation standard operating procedures, conduct hazard analyses, identify critical control points or equivalent safeguards, interpret inspection and audit findings, design monitoring documentation, and formulate corrective and preventive actions.
Applied work includes auditing a simulated facility and preparing a cost-aware remediation plan with measurable verification steps. Emphasis is placed on inspection readiness, truthful reporting, training systems, accountability, vendor controls, accessibility, worker dignity, and communication during outbreaks or contamination events.
